BLUEBERRY-BANANA POUND CAKE

Ingredients

1 1/2 cups canola oil
2 1/2 cups sugar
3 eggs
2 cups all-purpose flour
1 cup oat flour
1 teaspoon soda
3/4 teaspoon salt
1 cup chopped pecans
3/4 cup blueberries
1/2 cup buttermilk
2 bananas, mashed
1 1/2 teaspoons vanilla

Preparation

Mix oil, sugar and eggs in a large mixing bowl. Mix in flours, soda and salt. Blend in pecans and blueberries. Add buttermilk, bananas and vanilla, stirring to blend well. Bake in a greased 10-inch tube pan. Bake at 325 degrees for 1 hour and 25 minutes, or until cake tests done.
