FRESH APPLE CAKE
Ingredients
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
2 cups sugar
3 eggs
1 cup oil
1/4 cup orange juice
1 teaspoon vanilla
2 cups peeled and grated cooking apples
1 cup chopped walnuts
1 cup flaked coconut
Buttermilk Sauce (recipe follows)
Preparation
Combine flour, soda and cinnamon in a medium bowl; set aside. In a large bowl, combine sugar, eggs, oil, orange juice and vanilla; beat well at medium speed of electric mixer. Stir in flour mixture until blended Stir in apples, walnuts and coconut. Spoon mixture into a greased and floured 10-inch Bundt pan. Bake at 325 degrees for 1 1/2 hours, or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes; remove cake and place on a serving plate while warm. Puncture top of cake several times with a toothpick. Gradually spoon hot Buttermilk Sauce over cake. Let stand 1 hour before serving.
