Ingredients

1 3-pound head of green cabbage, cored and shredded
1 green pepper, seeded and minced
3/4 cup sugar
3/4 teaspoon salt
3/4 teaspoon dry mustard
3/4 teaspoon celery seed
3/4 cup cider vinegar
1/2 cup vegetable oil

Preparation

Toss cabbage and pepper together in a large bowl. Mix sugar, salt, mustard and celery seed in a small saucepan; add vinegar and oil. Bring to a boil over moderate heat; stirring until sugar dissolves. Remove from heat; let cool slightly. Pour dressing over cabbage mixture and toss. Cool to room temperature. Cover and refrigerate until ready to serve. Makes 4 servings.
