CREAMY POTATO SALAD

Ingredients

9 medium baking potatoes
3 hard-boiled eggs
2/3 cup mayonnaise
1 teaspoon prepared mustard
3/4 cup sour cream
1 teaspoon salt
1/4 teaspoon pepper
11 slices bacon, cooked until crisp, drained and crumbled
1/4 cup chopped green onion
1/2 cup chopped celery
1/4 cup bottled Italian salad dressing

Preparation

Cook potatoes in boiling, salted water for 30 minutes, or until tender. Drain well and cool slightly. Peel and cut into 3/4-inch cubes. Remove yolks from eggs and mash, setting whites aside. Stir mayonnaise, mustard, sour cream, salt and pepper into yolks, blending well. Set aside. Chop egg whites and add bacon, potatoes, onions, celery and Italian dressing. Fold in mayonnaise mixture. Chill at least 2 hours before serving. Makes 12 servings.
