MARINATED ROMA TOMATOES
MARINATED ROMA TOMATOES
Ingredients
10 roma tomatoes, sliced
2 tablespoons canola oil
2 tablespoons balsamic vinegar
1 tablespoon lime juice
1 teaspoon sugar
1 tablespoon chopped fresh parsley or cilantro
1 garlic clove, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
Preparation
Place sliced tomatoes in plastic or glass bowl. In a separate bowl, combine oil, vinegar, lime juice, sugar, parsley, garlic and salt and pepper. Mix well and pour over tomatoes. Cover, refrigerate and let marinate at least one hour before serving. Makes 10-12 servings.
